Ingredients:

  • 2 medium sweet potatoes (approx. 1 lb / 450g)
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tbsp unsalted butter
  • 1 tsp maple syrup

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Scrub sweet potatoes clean and pat completely dry.
  3. Slice each potato in half lengthwise.
  4. Whisk together olive oil, salt, and pepper in a small bowl; brush the mixture over the cut sides and the skin of the potatoes.
  5. Place potato halves cut-side down on the prepared baking sheet.
  6. Roast on the center rack for 25–30 minutes until the skin is shriveled and the cut side is deep golden brown.
  7. Remove from oven and let rest for 3 minutes.
  8. Flip the halves over and top with a pat of butter and a drizzle of maple syrup while hot.
