Ingredients:
- 2 medium sweet potatoes (approx. 1 lb / 450g)
- 2 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 tbsp unsalted butter
- 1 tsp maple syrup
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Scrub sweet potatoes clean and pat completely dry.
- Slice each potato in half lengthwise.
- Whisk together olive oil, salt, and pepper in a small bowl; brush the mixture over the cut sides and the skin of the potatoes.
- Place potato halves cut-side down on the prepared baking sheet.
- Roast on the center rack for 25–30 minutes until the skin is shriveled and the cut side is deep golden brown.
- Remove from oven and let rest for 3 minutes.
- Flip the halves over and top with a pat of butter and a drizzle of maple syrup while hot.
