Ingredients:

  • 375g All-Purpose Flour
  • 25g Unsweetened Cocoa Powder (Not Dutch-processed)
  • 10g Cornstarch
  • 5g Baking Soda
  • 3g Salt
  • 225g Unsalted Butter (Softened)
  • 150g Granulated Sugar
  • 110g Light Brown Sugar (Packed)
  • 1 Large Egg (Room Temp)
  • 30g Cream Cheese (Full Fat, Softened)
  • 5ml White Vinegar
  • 10ml Vanilla Extract
  • 2 tsp Red Food Gel
  • 340g Semi-Sweet Chocolate Chips

Instructions:

  1. Combine 375g flour, 25g cocoa, 10g cornstarch, 5g baking soda, and 3g salt.
  2. Beat 225g butter, 150g granulated sugar, and 110g brown sugar until pale and airy.
  3. Add the 30g cream cheese and mix until no white streaks remain.
  4. Add the egg, 5ml vinegar, 10ml vanilla, and 2 tsp red food gel. Beat until the color is vibrant and uniform.
  5. Gradually add the flour mixture to the wet ingredients.
  6. Fold in 340g chocolate chips by hand using a spatula.
  7. Cover the dough and chill in the fridge for at least 2 hours.
  8. Scoop 2 tablespoon sized balls onto a lined sheet.
  9. Bake at 350°F (180°C) for 10 minutes until the edges are set but the center looks soft.
  10. Let them rest for 5 minutes until they firm up enough to move.
