Ingredients:

  • 2 cups white distilled vinegar (5% acidity)
  • 1 cup filtered water
  • 2 tbsp kosher salt
  • 1 tbsp granulated sugar
  • 4 cloves garlic, smashed
  • 1 tbsp black peppercorns, whole
  • 1 tsp mustard seeds
  • 1 tsp coriander seeds

Instructions:

  1. Combine the filtered water, white distilled vinegar, garlic cloves, peppercorns, mustard seeds, and coriander seeds in a saucepan. Bring the mixture to a gentle simmer over medium heat, ensuring it does not reach a rolling boil.
  2. Whisk in the kosher salt and granulated sugar. Stir continuously for 2–3 minutes until the crystals are completely dissolved and the liquid is transparent.
  3. Remove the pan from the heat and allow the brine to sit at room temperature for approximately 2 hours to cool before applying to vegetables.
