Ingredients:
- 2 cups white distilled vinegar (5% acidity)
- 1 cup filtered water
- 2 tbsp kosher salt
- 1 tbsp granulated sugar
- 4 cloves garlic, smashed
- 1 tbsp black peppercorns, whole
- 1 tsp mustard seeds
- 1 tsp coriander seeds
Instructions:
- Combine the filtered water, white distilled vinegar, garlic cloves, peppercorns, mustard seeds, and coriander seeds in a saucepan. Bring the mixture to a gentle simmer over medium heat, ensuring it does not reach a rolling boil.
- Whisk in the kosher salt and granulated sugar. Stir continuously for 2–3 minutes until the crystals are completely dissolved and the liquid is transparent.
- Remove the pan from the heat and allow the brine to sit at room temperature for approximately 2 hours to cool before applying to vegetables.
