Ingredients:
- 1 cup white distilled vinegar
- 1 cup filtered water
- 1 tbsp kosher salt
- 1 tbsp granulated sugar
- 4 cloves garlic, smashed
- 2 tbsp fresh dill sprigs
- 1 tsp black peppercorns
- 1/2 tsp mustard seeds
Instructions:
- In a small saucepan, combine the white distilled vinegar, filtered water, kosher salt, and granulated sugar. Use a whisk to stir the ingredients together while cold.
- Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring continuously until the salt and sugar crystals have completely dissolved and the liquid is clear.
- Remove the pan from the heat. Stir in the smashed garlic, fresh dill, black peppercorns, and mustard seeds.
- Allow the brine to cool for 10–15 minutes until hot but not scalding before pouring over vegetables and refrigerating for 48 hours.
