Ingredients:

  • 1 cup white distilled vinegar
  • 1 cup filtered water
  • 1 tbsp kosher salt
  • 1 tbsp granulated sugar
  • 4 cloves garlic, smashed
  • 2 tbsp fresh dill sprigs
  • 1 tsp black peppercorns
  • 1/2 tsp mustard seeds

Instructions:

  1. In a small saucepan, combine the white distilled vinegar, filtered water, kosher salt, and granulated sugar. Use a whisk to stir the ingredients together while cold.
  2. Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring continuously until the salt and sugar crystals have completely dissolved and the liquid is clear.
  3. Remove the pan from the heat. Stir in the smashed garlic, fresh dill, black peppercorns, and mustard seeds.
  4. Allow the brine to cool for 10–15 minutes until hot but not scalding before pouring over vegetables and refrigerating for 48 hours.
