Ingredients:

  • 3 large overripe bananas (approx. 330g)
  • 1/2 cup unsalted grass-fed butter (113g)
  • 3/4 cup granulated sugar (150g)
  • 1/4 cup packed light brown sugar (50g)
  • 1 large room temperature egg (50g)
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups all-purpose flour (190g)
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/4 cup unsalted butter for frosting (56g)
  • 1 1/2 cups sifted powdered sugar (180g)
  • 2 tbsp whole milk
  • 1 tsp vanilla bean paste

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch square baking pan with parchment paper, leaving an overhang on two sides.
  2. In a small bowl, mash the 330g of overripe bananas until they reach a smooth liquid consistency with no large chunks.
  3. Brown the 1/2 cup of butter in a light-colored saucepan over medium heat, whisking constantly until milk solids turn golden brown and smell nutty.
  4. In a large mixing bowl, combine the browned butter with granulated sugar and brown sugar. Whisk in the egg and vanilla extract.
  5. Stir in the mashed bananas followed by the flour, baking soda, and sea salt. Mix until just combined.
  6. Pour batter into the prepared pan and bake for 25 minutes or until a toothpick inserted comes out with a few moist crumbs.
  7. Prepare the frosting by browning the remaining 1/4 cup butter. Whisk in powdered sugar, milk, and vanilla bean paste until smooth. Spread over cooled brownies.
