Ingredients:
- 3 large overripe bananas (approx. 330g)
- 1/2 cup unsalted grass-fed butter (113g)
- 3/4 cup granulated sugar (150g)
- 1/4 cup packed light brown sugar (50g)
- 1 large room temperature egg (50g)
- 1 tbsp pure vanilla extract
- 1 1/2 cups all-purpose flour (190g)
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/4 cup unsalted butter for frosting (56g)
- 1 1/2 cups sifted powdered sugar (180g)
- 2 tbsp whole milk
- 1 tsp vanilla bean paste
Instructions:
- Preheat oven to 350°F (175°C). Line an 8x8 inch square baking pan with parchment paper, leaving an overhang on two sides.
- In a small bowl, mash the 330g of overripe bananas until they reach a smooth liquid consistency with no large chunks.
- Brown the 1/2 cup of butter in a light-colored saucepan over medium heat, whisking constantly until milk solids turn golden brown and smell nutty.
- In a large mixing bowl, combine the browned butter with granulated sugar and brown sugar. Whisk in the egg and vanilla extract.
- Stir in the mashed bananas followed by the flour, baking soda, and sea salt. Mix until just combined.
- Pour batter into the prepared pan and bake for 25 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Prepare the frosting by browning the remaining 1/4 cup butter. Whisk in powdered sugar, milk, and vanilla bean paste until smooth. Spread over cooled brownies.
