Ingredients:

  • 2 cups (150g) raw, cleaned pumpkin seeds
  • 2 tbsp (28g) unsalted butter
  • 2 tbsp (25g) packed light brown sugar
  • 1 tsp (2.6g) ground cinnamon
  • 1/4 tsp (1.5g) fine sea salt

Instructions:

  1. Rinse the pumpkin seeds in a colander under cold water, scrubbing away any remaining pulp.
  2. Spread the seeds onto a clean kitchen towel or paper towels and pat them completely dry until they feel slightly tacky but not wet.
  3. Preheat the oven to 325°F (160°C).
  4. In a large bowl, toss the dried seeds with melted butter until every seed is glistening.
  5. In a smaller bowl, whisk together the brown sugar, cinnamon, and salt.
  6. Pour the cinnamon-sugar mixture over the buttered seeds and toss until evenly coated.
  7. Spread the seeds in a single, even layer on a parchment-lined baking sheet.
  8. Bake for 20–25 minutes, stirring every 10 minutes, until seeds are mahogany-colored and smell toasted.
