Ingredients:
- 3 lbs sweet potatoes, peeled and cubed
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
Instructions:
- Preheat your oven to 400°F (200°C).
- Cube the sweet potatoes into uniform ¾-inch pieces by cutting into thick planks, then batons, then cubes.
- Place the cubes in a large mixing bowl.
- Drizzle with olive oil and sprinkle the garlic powder, smoked paprika, sea salt, and black pepper over the top.
- Toss thoroughly until every cube is glistening with a thin layer of oil.
- Spread the potatoes on a parchment-lined sheet pan in a single layer, ensuring no pieces are touching.
- Roast for 20 minutes, then remove the pan to flip and shake the potatoes.
- Return to the oven for another 20 minutes until edges are mahogany-colored and centers are fork-tender.
