Ingredients:

  • 3 lbs sweet potatoes, peeled and cubed
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cube the sweet potatoes into uniform ¾-inch pieces by cutting into thick planks, then batons, then cubes.
  3. Place the cubes in a large mixing bowl.
  4. Drizzle with olive oil and sprinkle the garlic powder, smoked paprika, sea salt, and black pepper over the top.
  5. Toss thoroughly until every cube is glistening with a thin layer of oil.
  6. Spread the potatoes on a parchment-lined sheet pan in a single layer, ensuring no pieces are touching.
  7. Roast for 20 minutes, then remove the pan to flip and shake the potatoes.
  8. Return to the oven for another 20 minutes until edges are mahogany-colored and centers are fork-tender.
