Ingredients:
- 2 lbs sweet potatoes, peeled and cubed
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
Instructions:
- Preheat your oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
- Dice the sweet potatoes into uniform 1-inch (2.5cm) cubes.
- Place the cubed sweet potatoes in a large mixing bowl.
- Drizzle the olive oil over the potatoes and toss with a spatula until every cube has a glossy sheen.
- Sprinkle the salt, pepper, garlic powder, and smoked paprika over the top and toss again until the spices are evenly distributed.
- Spread the potatoes onto the baking sheet in a single layer, ensuring no two cubes are touching.
- Roast for 20–25 minutes, flipping the potatoes halfway through, until the edges are mahogany-colored and the centers feel soft when pierced with a fork.
