Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika

Instructions:

  1. Preheat your oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
  2. Dice the sweet potatoes into uniform 1-inch (2.5cm) cubes.
  3. Place the cubed sweet potatoes in a large mixing bowl.
  4. Drizzle the olive oil over the potatoes and toss with a spatula until every cube has a glossy sheen.
  5. Sprinkle the salt, pepper, garlic powder, and smoked paprika over the top and toss again until the spices are evenly distributed.
  6. Spread the potatoes onto the baking sheet in a single layer, ensuring no two cubes are touching.
  7. Roast for 20–25 minutes, flipping the potatoes halfway through, until the edges are mahogany-colored and the centers feel soft when pierced with a fork.
