Ingredients:
- 2 medium zucchini (approx. 1 lb / 450g)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
- 1 tbsp fresh lemon juice
- 2 tbsp grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions:
- Using a Y-peeler, shave the zucchini from the top down into long, translucent strips, stopping when you reach the seedy core.
- Heat a large non-stick skillet over medium-high heat. Add the olive oil and once shimmering, add minced garlic and sauté for 30-60 seconds until fragrant.
- Increase heat to high and add the zucchini ribbons. Toss quickly with tongs and cook for 2-3 minutes until vibrant green and tender-crisp.
- Remove the pan from heat immediately. Stir in the salt, pepper, and lemon juice, then fold in the Parmesan cheese and fresh parsley before serving.
