Ingredients:

  • 15 oz cooked chickpeas (canned, drained)
  • 1 Tbsp smoked paprika (Pimentón)
  • ½ cup roasted red pepper (jarred, drained)
  • ¼ cup binding agent (Oat Flour or Breadcrumbs)
  • 2 Tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Drain the canned chickpeas thoroughly.
  2. Place the chickpeas in a large bowl and roughly mash them with a potato masher or fork. Add the smoked paprika (1 Tbsp), drained roasted red pepper (½ cup), binding agent (oat flour or breadcrumbs, ¼ cup), and olive oil (2 Tbsp). Season generously with salt and pepper. Mix until all ingredients are just combined into a moldable dough.
  3. Using your hands or a small scoop, roll the mixture into 1-inch, bite-sized balls or patties and place them on the prepared baking sheet.
  4. Bake for 40 minutes, rotating the pan halfway through, until the exterior is crisp and the bites are golden brown.
