Ingredients:
- 15 oz cooked chickpeas (canned, drained)
- 1 Tbsp smoked paprika (Pimentón)
- ½ cup roasted red pepper (jarred, drained)
- ¼ cup binding agent (Oat Flour or Breadcrumbs)
- 2 Tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Drain the canned chickpeas thoroughly.
- Place the chickpeas in a large bowl and roughly mash them with a potato masher or fork. Add the smoked paprika (1 Tbsp), drained roasted red pepper (½ cup), binding agent (oat flour or breadcrumbs, ¼ cup), and olive oil (2 Tbsp). Season generously with salt and pepper. Mix until all ingredients are just combined into a moldable dough.
- Using your hands or a small scoop, roll the mixture into 1-inch, bite-sized balls or patties and place them on the prepared baking sheet.
- Bake for 40 minutes, rotating the pan halfway through, until the exterior is crisp and the bites are golden brown.
