Ingredients:
- 12 large eggs (600g)
- 0.5 cup whole milk (122g)
- 1 tsp sea salt (6g)
- 0.5 tsp black pepper (3g)
- 1 cup fresh baby spinach, finely chopped (30g)
- 0.5 cup red bell pepper, finely diced (75g)
- 12 whole wheat English muffins, split (684g)
- 12 slices sharp cheddar cheese (240g)
- 12 slices cooked turkey sausage patties (340g)
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x13 inch rimmed baking sheet with parchment paper, ensuring it climbs up the sides.
- In a large mixing bowl, whisk the eggs, milk, salt, and pepper until the mixture is uniform and slightly frothy. Fold in the chopped spinach and diced red peppers.
- Pour the egg mixture into the prepared baking sheet. Bake for 18–22 minutes until the eggs are set and matte on top, and do not jiggle in the center.
- Remove eggs from the oven and let them cool completely in the pan to prevent steam. Simultaneously, lightly toast the English muffins.
- Use a 3-inch circular cutter or a knife to portion the sheet-pan eggs into 12 even pieces.
- Assemble the sandwiches by placing a slice of cheese on the muffin bottom, followed by the cooked turkey sausage, and the egg portion. Top with the second muffin half.
- Wrap each sandwich tightly in parchment paper followed by a layer of aluminum foil before freezing.
