Ingredients:

  • 12 large eggs (600g)
  • 0.5 cup whole milk (122g)
  • 1 tsp sea salt (6g)
  • 0.5 tsp black pepper (3g)
  • 1 cup fresh baby spinach, finely chopped (30g)
  • 0.5 cup red bell pepper, finely diced (75g)
  • 12 whole wheat English muffins, split (684g)
  • 12 slices sharp cheddar cheese (240g)
  • 12 slices cooked turkey sausage patties (340g)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a 9x13 inch rimmed baking sheet with parchment paper, ensuring it climbs up the sides.
  2. In a large mixing bowl, whisk the eggs, milk, salt, and pepper until the mixture is uniform and slightly frothy. Fold in the chopped spinach and diced red peppers.
  3. Pour the egg mixture into the prepared baking sheet. Bake for 18–22 minutes until the eggs are set and matte on top, and do not jiggle in the center.
  4. Remove eggs from the oven and let them cool completely in the pan to prevent steam. Simultaneously, lightly toast the English muffins.
  5. Use a 3-inch circular cutter or a knife to portion the sheet-pan eggs into 12 even pieces.
  6. Assemble the sandwiches by placing a slice of cheese on the muffin bottom, followed by the cooked turkey sausage, and the egg portion. Top with the second muffin half.
  7. Wrap each sandwich tightly in parchment paper followed by a layer of aluminum foil before freezing.
