Ingredients:
- 1 lb smoked kielbasa, sliced into 1/2-inch rounds
- 1 lb baby potatoes, halved or quartered
- 2 cups brussels sprouts, trimmed and halved
- 2 large carrots, sliced into thick coins
- 1 medium red onion, cut into 1-inch chunks
- 1 large red bell pepper, chopped into 1-inch pieces
- 3 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the sliced sausage, potatoes, brussels sprouts, carrots, onion, and red bell pepper.
- Drizzle with olive oil and sprinkle with garlic powder, oregano, smoked paprika, sea salt, and black pepper. Toss thoroughly until every piece is evenly coated.
- Line a large rimmed baking sheet with parchment paper and spread the mixture in a single, even layer to ensure proper airflow and roasting.
- Roast in the center rack for 30-35 minutes, tossing the ingredients halfway through, until potatoes are golden-brown, sprouts are charred, and sausage is mahogany-colored.
