Ingredients:

  • 4 medium sweet potatoes (approx. 2 lbs / 900g)
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp light brown sugar
  • 1/2 tsp ground cinnamon
  • 1 tbsp unsalted butter, melted

Instructions:

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes clean, pat dry, and slice each potato in half lengthwise. Prick the flesh of each half 3-4 times with a fork to allow steam to escape.
  2. Line a baking sheet with parchment paper. Place potato halves cut-side down. Drizzle with olive oil and sprinkle with salt and pepper, rubbing the oil into the skins. Bake for 30–35 minutes until skins are fragrant and flesh is soft.
  3. Flip the potatoes cut-side up. Mix brown sugar and cinnamon in a small bowl and sprinkle evenly over the flesh, adding dots of melted butter if desired. Return to the oven for 10–15 minutes until the topping is bubbling and golden brown.
