Ingredients:
- 4 medium sweet potatoes (approx. 2 lbs / 900g)
- 2 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 tbsp light brown sugar
- 1/2 tsp ground cinnamon
- 1 tbsp unsalted butter, melted
Instructions:
- Preheat oven to 400°F (200°C). Scrub sweet potatoes clean, pat dry, and slice each potato in half lengthwise. Prick the flesh of each half 3-4 times with a fork to allow steam to escape.
- Line a baking sheet with parchment paper. Place potato halves cut-side down. Drizzle with olive oil and sprinkle with salt and pepper, rubbing the oil into the skins. Bake for 30–35 minutes until skins are fragrant and flesh is soft.
- Flip the potatoes cut-side up. Mix brown sugar and cinnamon in a small bowl and sprinkle evenly over the flesh, adding dots of melted butter if desired. Return to the oven for 10–15 minutes until the topping is bubbling and golden brown.
