Ingredients:
- 1 (9-inch) pre-baked pie crust
- 15 oz (425g) canned pumpkin puree
- 1 can (14 oz / 397g) sweetened condensed milk
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 tbsp (8g) pumpkin pie spice
- 1/2 tsp (3g) salt
- 1/2 cup (65g) all-purpose flour
- 1/2 cup (100g) packed brown sugar
- 1 tsp (2g) ground cinnamon
- 1/2 cup (60g) pecans, finely chopped
- 4 tbsp (57g) unsalted butter, cold and cubed
Instructions:
- Place the pre-baked pie crust in a 9-inch pie plate and set it on a baking sheet for stability.
- In a large bowl, whisk together the pumpkin puree and sweetened condensed milk until smooth.
- Add eggs one at a time to the pumpkin mixture, whisking until fully incorporated.
- Stir in the vanilla extract, pumpkin pie spice, and salt until the filling is thick and glossy.
- Pour the filling into the prepared crust and smooth the top with a spatula.
- In a small bowl, combine flour, brown sugar, cinnamon, and chopped pecans.
- Use a fork or pastry cutter to work the cold cubed butter into the dry ingredients until the mixture resembles coarse wet sand with pea-sized lumps.
- Preheat oven to 350°F (175°C).
- Sprinkle the streusel evenly over the pumpkin filling, pressing very lightly to adhere.
- Bake for 45–50 minutes until the edges are set and the streusel topping is a deep mahogany brown.
