Ingredients:

  • 1 lb lean ground beef (90% lean)
  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 3 red bell peppers, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • salt to taste
  • black pepper to taste
  • 2 cups cooked white rice
  • fresh parsley, chopped

Instructions:

  1. Heat olive oil over medium-high heat. Add ground beef and break it apart with a spoon, cooking until browned and caramelized.
  2. Stir in the diced onion and red bell peppers. Cook for 5-7 minutes until peppers soften and onions become translucent.
  3. Stir in the minced garlic and cook for an additional 60 seconds until fragrant.
  4. Pour in diced tomatoes, tomato sauce, and beef broth. Stir in Italian seasoning and red pepper flakes.
  5. Bring the mixture to a rolling boil, then reduce heat to low and simmer gently for 15 minutes.
  6. Stir in the pre-cooked white rice and heat through for 5 minutes. Adjust salt and pepper to taste.
  7. Remove from heat and garnish with fresh chopped parsley.
