Ingredients:
- 1 lb lean ground beef (90% lean)
- 2 tbsp olive oil
- 1 large yellow onion, diced
- 3 red bell peppers, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- salt to taste
- black pepper to taste
- 2 cups cooked white rice
- fresh parsley, chopped
Instructions:
- Heat olive oil over medium-high heat. Add ground beef and break it apart with a spoon, cooking until browned and caramelized.
- Stir in the diced onion and red bell peppers. Cook for 5-7 minutes until peppers soften and onions become translucent.
- Stir in the minced garlic and cook for an additional 60 seconds until fragrant.
- Pour in diced tomatoes, tomato sauce, and beef broth. Stir in Italian seasoning and red pepper flakes.
- Bring the mixture to a rolling boil, then reduce heat to low and simmer gently for 15 minutes.
- Stir in the pre-cooked white rice and heat through for 5 minutes. Adjust salt and pepper to taste.
- Remove from heat and garnish with fresh chopped parsley.
