Ingredients:
- 2 lbs carrots, whole, peeled, and trimmed
- 2 tbsp extra virgin olive oil
- 0.5 tsp kosher salt
- 0.25 tsp cracked black pepper
- 2 tbsp unsalted butter, melted
- 2 tbsp light brown sugar
- 1 tbsp maple syrup
- 0.25 tsp ground cinnamon
- 1 tsp apple cider vinegar
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat oven to 400°F (200°C).
- Toss prepared carrots directly on the baking sheet with olive oil, salt, and pepper.
- Roast for 20 minutes until carrots are tender and show initial signs of browning on the edges.
- While carrots roast, whisk together melted butter, brown sugar, maple syrup, and cinnamon in a small bowl.
- Remove tray from oven, drizzle glaze evenly over carrots, and toss with tongs until thoroughly coated.
- Return to oven for 10 minutes to allow the sugars to caramelize into a mahogany finish.
- Drizzle with apple cider vinegar and garnish with fresh parsley before serving.
