Ingredients:

  • 2 lbs carrots, whole, peeled, and trimmed
  • 2 tbsp extra virgin olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp cracked black pepper
  • 2 tbsp unsalted butter, melted
  • 2 tbsp light brown sugar
  • 1 tbsp maple syrup
  • 0.25 tsp ground cinnamon
  • 1 tsp apple cider vinegar
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss prepared carrots directly on the baking sheet with olive oil, salt, and pepper.
  3. Roast for 20 minutes until carrots are tender and show initial signs of browning on the edges.
  4. While carrots roast, whisk together melted butter, brown sugar, maple syrup, and cinnamon in a small bowl.
  5. Remove tray from oven, drizzle glaze evenly over carrots, and toss with tongs until thoroughly coated.
  6. Return to oven for 10 minutes to allow the sugars to caramelize into a mahogany finish.
  7. Drizzle with apple cider vinegar and garnish with fresh parsley before serving.
