Ingredients:
- 1 cup (226g) salted butter, cool-room temperature
- 1/2 cup (60g) powdered sugar
- 2 cups (250g) all-purpose flour, sifted
Instructions:
- Place the cool butter and powdered sugar in a large mixing bowl. Beat on medium-high speed for 3–5 minutes until the color shifts to pale ivory and the texture becomes billowy and light.
- Turn the mixer to the lowest setting or use a spatula to incorporate the flour in two batches. Mix just until white streaks disappear and the dough looks like coarse, damp sand that clumps together when squeezed.
- Roll the dough into 1-inch spheres and place them 2 inches apart on a baking sheet lined with parchment paper. Press down gently with a fork to create ridges. Bake at 325°F (165°C) for 15 minutes until the edges are pale gold and the tops are matte.
