Ingredients:

  • 1 cup (226g) salted butter, cool-room temperature
  • 1/2 cup (60g) powdered sugar
  • 2 cups (250g) all-purpose flour, sifted

Instructions:

  1. Place the cool butter and powdered sugar in a large mixing bowl. Beat on medium-high speed for 3–5 minutes until the color shifts to pale ivory and the texture becomes billowy and light.
  2. Turn the mixer to the lowest setting or use a spatula to incorporate the flour in two batches. Mix just until white streaks disappear and the dough looks like coarse, damp sand that clumps together when squeezed.
  3. Roll the dough into 1-inch spheres and place them 2 inches apart on a baking sheet lined with parchment paper. Press down gently with a fork to create ridges. Bake at 325°F (165°C) for 15 minutes until the edges are pale gold and the tops are matte.
