Ingredients:

  • 1 lb kielbasa sausage, sliced into 1/2-inch rounds
  • 20 oz refrigerated cheese tortellini, uncooked
  • 4 cups broccoli florets, bite-sized
  • 1 medium red bell pepper, chopped into 1-inch pieces
  • 1/2 medium red onion, coarsely diced
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • salt and black pepper to taste
  • 1/2 cup parmesan cheese, freshly grated

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced kielbasa, uncooked tortellini, broccoli, bell peppers, and red onion.
  3. Drizzle with olive oil and sprinkle in the garlic powder, oregano, paprika, salt, and pepper. Toss thoroughly until ingredients are evenly coated.
  4. Line a large rimmed baking sheet with parchment paper and spread the mixture in a single layer.
  5. Bake for 15–20 minutes until the kielbasa is browned and the broccoli edges are charred.
  6. Remove the pan from the oven and immediately sprinkle the grated Parmesan cheese over the top.
  7. Return to the oven for an additional 2–3 minutes, or until the cheese is melted and golden brown.
