Ingredients:
- 1 lb kielbasa sausage, sliced into 1/2-inch rounds
- 20 oz refrigerated cheese tortellini, uncooked
- 4 cups broccoli florets, bite-sized
- 1 medium red bell pepper, chopped into 1-inch pieces
- 1/2 medium red onion, coarsely diced
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- salt and black pepper to taste
- 1/2 cup parmesan cheese, freshly grated
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the sliced kielbasa, uncooked tortellini, broccoli, bell peppers, and red onion.
- Drizzle with olive oil and sprinkle in the garlic powder, oregano, paprika, salt, and pepper. Toss thoroughly until ingredients are evenly coated.
- Line a large rimmed baking sheet with parchment paper and spread the mixture in a single layer.
- Bake for 15–20 minutes until the kielbasa is browned and the broccoli edges are charred.
- Remove the pan from the oven and immediately sprinkle the grated Parmesan cheese over the top.
- Return to the oven for an additional 2–3 minutes, or until the cheese is melted and golden brown.
