Ingredients:
- 8 large Eggs
- 1/2 cup (45g) Rolled oats
- 1/2 cup (120g) Low-fat cottage cheese
- 1/2 tsp (3g) Sea salt
- 1/4 tsp (1g) Black pepper
- 1/4 cup (40g) Cooked turkey sausage, crumbled
- 2 tbsp (20g) Bell peppers, finely diced
- 2 tbsp (15g) Shredded cheddar cheese
- 1/4 cup (35g) Fresh blueberries
- 1 tbsp (15g) Sliced almonds
- 1 tsp (5ml) Maple syrup
- 1/4 cup (15g) Baby spinach, chopped
- 2 tbsp (20g) Feta cheese, crumbled
- 1 tsp (1g) Fresh dill
Instructions:
- Preheat your oven to 350°F (175°C). Generously grease a 12-cup muffin tin or insert silicone liners.
- In a large mixing bowl, whisk together eggs, oats, cottage cheese, salt, and pepper until the mixture is well-combined and slightly frothy.
- Pour the egg base mixture evenly into the 12 muffin cups, filling each approximately 2/3 full.
- Distribute your chosen flavor variations (turkey sausage, peppers, berries, almonds, spinach, or feta) into the cups. Use a toothpick to gently swirl the toppings into the egg base.
- Bake in the center rack for 18–22 minutes until the tops are golden brown and the centers are firm.
- Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
