Ingredients:

  • 8 large Eggs
  • 1/2 cup (45g) Rolled oats
  • 1/2 cup (120g) Low-fat cottage cheese
  • 1/2 tsp (3g) Sea salt
  • 1/4 tsp (1g) Black pepper
  • 1/4 cup (40g) Cooked turkey sausage, crumbled
  • 2 tbsp (20g) Bell peppers, finely diced
  • 2 tbsp (15g) Shredded cheddar cheese
  • 1/4 cup (35g) Fresh blueberries
  • 1 tbsp (15g) Sliced almonds
  • 1 tsp (5ml) Maple syrup
  • 1/4 cup (15g) Baby spinach, chopped
  • 2 tbsp (20g) Feta cheese, crumbled
  • 1 tsp (1g) Fresh dill

Instructions:

  1. Preheat your oven to 350°F (175°C). Generously grease a 12-cup muffin tin or insert silicone liners.
  2. In a large mixing bowl, whisk together eggs, oats, cottage cheese, salt, and pepper until the mixture is well-combined and slightly frothy.
  3. Pour the egg base mixture evenly into the 12 muffin cups, filling each approximately 2/3 full.
  4. Distribute your chosen flavor variations (turkey sausage, peppers, berries, almonds, spinach, or feta) into the cups. Use a toothpick to gently swirl the toppings into the egg base.
  5. Bake in the center rack for 18–22 minutes until the tops are golden brown and the centers are firm.
  6. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
