Ingredients:

  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups grated zucchini, loosely packed
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 325°F (165°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, beat the eggs and sugar until the mixture is light and slightly foamy.
  3. Stir in the vegetable oil and vanilla extract, then fold in the grated zucchini until evenly distributed.
  4. Sift the flour, baking soda, cinnamon, and salt directly into the wet mixture.
  5. Using a spatula, gently fold the ingredients together until no more streaks of flour are visible; do not overmix.
  6. Gently stir in the semi-sweet chocolate chips.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  9. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire cooling rack.
