Ingredients:
- 2 large eggs
- 1 cup granulated sugar
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 2 cups grated zucchini, loosely packed
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 1 cup semi-sweet chocolate chips
Instructions:
- Preheat your oven to 325°F (165°C) and grease a 9x5-inch loaf pan.
- In a large bowl, beat the eggs and sugar until the mixture is light and slightly foamy.
- Stir in the vegetable oil and vanilla extract, then fold in the grated zucchini until evenly distributed.
- Sift the flour, baking soda, cinnamon, and salt directly into the wet mixture.
- Using a spatula, gently fold the ingredients together until no more streaks of flour are visible; do not overmix.
- Gently stir in the semi-sweet chocolate chips.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire cooling rack.
