Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1/2 cup Greek yogurt
  • 1 tsp vanilla extract
  • 1 1/2 cups grated zucchini
  • 1 cup semi-sweet mini chocolate chips

Instructions:

  1. Preheat your oven to 375°F (190°C). In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, salt, and ground cinnamon until no clumps remain.
  2. In a separate bowl, whisk together the vegetable oil, egg, Greek yogurt, and vanilla extract until the mixture is smooth and glossy.
  3. Pour the wet ingredients into the dry base. Using a spatula, gently fold the mixture together until the flour streaks just disappear.
  4. Fold in the grated zucchini and semi-sweet mini chocolate chips until the batter looks uniform; do not over-mix.
  5. Scoop the batter into a lined 12-cup muffin tin, filling each cup about 3/4 full. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
