Ingredients:

  • 1/2 cup (115g) melted coconut oil
  • 3/4 cup (150g) coconut sugar
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) white whole wheat flour
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (3g) baking powder
  • 1/2 tsp (3g) sea salt
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground nutmeg
  • 2 cups (250g) grated zucchini
  • 1/2 cup (60g) chopped walnuts
  • 1/2 cup (75g) dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 loaf pan with oil and line the bottom with parchment paper.
  2. In a large bowl, whisk together the melted oil and sugar until combined. Add the eggs one at a time, whisking vigorously until the mixture looks glossy and slightly pale. Stir in the vanilla extract.
  3. Sift the flour, baking soda, baking powder, salt, cinnamon, and nutmeg directly into the wet mixture. Using a spatula, fold the ingredients together gently until no streaks of flour remain.
  4. Fold in the grated zucchini and the chopped walnuts and dark chocolate chips.
  5. Pour the batter into the prepared pan, smoothing the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
