Ingredients:
- 1/2 cup (115g) melted coconut oil
- 3/4 cup (150g) coconut sugar
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) white whole wheat flour
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) baking powder
- 1/2 tsp (3g) sea salt
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground nutmeg
- 2 cups (250g) grated zucchini
- 1/2 cup (60g) chopped walnuts
- 1/2 cup (75g) dark chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 loaf pan with oil and line the bottom with parchment paper.
- In a large bowl, whisk together the melted oil and sugar until combined. Add the eggs one at a time, whisking vigorously until the mixture looks glossy and slightly pale. Stir in the vanilla extract.
- Sift the flour, baking soda, baking powder, salt, cinnamon, and nutmeg directly into the wet mixture. Using a spatula, fold the ingredients together gently until no streaks of flour remain.
- Fold in the grated zucchini and the chopped walnuts and dark chocolate chips.
- Pour the batter into the prepared pan, smoothing the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
