Ingredients:
- 2 ½ cups (315g) all-purpose flour
- 1 cup (225g) unsalted butter, chilled and cubed
- 1 tsp (6g) fine sea salt
- 1 tbsp (12g) granulated sugar
- 6–8 tbsp (90–120ml) ice-cold water
- 3 lbs (1.36kg) firm pears (Bartlett or Bosc), peeled, cored, and sliced
- ⅔ cup (135g) packed light brown sugar
- ⅓ cup (65g) granulated sugar
- ¼ cup (30g) cornstarch
- 1 tsp (2g) ground cinnamon
- ½ tsp (1g) ground ginger
- ¼ tsp (0.5g) ground cloves or nutmeg
- 1 tbsp (15ml) fresh lemon juice
- 1 tbsp (6g) lemon zest
Instructions:
- Whisk flour, salt, and sugar in a large bowl.
- Add chilled butter cubes and use a pastry cutter or forks to work the butter until pea-sized lumps remain.
- Drizzle in ice water one tablespoon at a time, stirring with a fork until the dough just begins to clump together.
- Divide dough into two discs, wrap in plastic, and refrigerate for at least 60 minutes.
- Slice pears into ¼-inch thick wedges and place them in a large mixing bowl.
- In a small bowl, whisk together brown sugar, granulated sugar, cornstarch, cinnamon, ginger, and cloves.
- Pour the sugar mixture over the pears along with the lemon juice and zest, tossing gently until every slice is coated.
- Roll out the dough to prepare for assembly.
