Ingredients:
- 1 cup water
- 1 ⅓ cups white distilled vinegar
- ⅓ cup granulated sugar
- 2 tbsp kosher salt
Instructions:
- Combine the water, white distilled vinegar, sugar, and kosher salt in your saucepan. Note: Stir these before heating to avoid clumps.
- Place the pan over high heat.
- Bring the mixture to a vigorous boil, stirring constantly.
- Continue stirring until the sugar and salt have completely dissolved and the liquid is clear and shimmering.
- Remove the pan from the heat.
- Allow the brine to cool for 5 minutes. Note: Skip the cooling if you want the vegetables to soften faster.
- Pack your prepared vegetables tightly into a clean glass jar.
- Carefully pour the hot liquid over the vegetables.
- Press the vegetables down until they are fully submerged beneath the liquid.
- Seal the jar and refrigerate for at least 24 hours.
