Ingredients:

  • 1 cup water
  • 1 ⅓ cups white distilled vinegar
  • ⅓ cup granulated sugar
  • 2 tbsp kosher salt

Instructions:

  1. Combine the water, white distilled vinegar, sugar, and kosher salt in your saucepan. Note: Stir these before heating to avoid clumps.
  2. Place the pan over high heat.
  3. Bring the mixture to a vigorous boil, stirring constantly.
  4. Continue stirring until the sugar and salt have completely dissolved and the liquid is clear and shimmering.
  5. Remove the pan from the heat.
  6. Allow the brine to cool for 5 minutes. Note: Skip the cooling if you want the vegetables to soften faster.
  7. Pack your prepared vegetables tightly into a clean glass jar.
  8. Carefully pour the hot liquid over the vegetables.
  9. Press the vegetables down until they are fully submerged beneath the liquid.
  10. Seal the jar and refrigerate for at least 24 hours.
