Ingredients:

  • 1.5 cups distilled white vinegar
  • 1.5 cups filtered water
  • 2 tbsp kosher salt
  • 2 tbsp granulated sugar
  • 4 cloves garlic, smashed
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds
  • 0.5 tsp red pepper flakes

Instructions:

  1. Pour the distilled white vinegar, filtered water, kosher salt, and sugar into your saucepan. Note: Make sure salt is spread out so it dissolves evenly.
  2. Turn the heat to medium high.
  3. Whisk the liquid constantly until it reaches a gentle simmer.
  4. Keep stirring until the salt and sugar vanish and the liquid is clear.
  5. Take the pan off the heat immediately.
  6. Stir in the smashed garlic, peppercorns, mustard seeds, and red pepper flakes.
  7. Let the Pickle Brine sit for 5 minutes. Note: This lets the heat release the oils from the spices.
  8. Pour your hot Pickle Brine over your sliced vegetables in a jar.
